Smothered Smoked Brisket Burritos

After Christmas we had a ton of brisket left over, and I had to get creative with how to feed my family so we weren't eating the same thing for the next 5 days.  I found this recipe, and as you know, I added my own little twist to it!

 

What you need:

Smoked Brisket

Flour tortillas

Refried Beans 

Spanish Rice

Red Onion

Bell Pepper (I used Red)

Shredded Mexican Cheese

Taco Sauce

Queso

 

Directions:

1. Cut up pepper, and onion, keep separate. 

2. Heat pan with olive oil. Cook red onions. Remove from heat and put in a dish to cool.

3. Add more olive oil to pan. Cook Red Pepper. Set aside to cool. 

4. Heat up refried beans. Stir in some water or broth to thin out. 

5. Cook Spanish rice according to the package instructions.

6. Preheat ove to 350 degrees F.

7. Spread Taco sauce on the bottom of a 9x13 pan.

8. Take a spoonful of refried beans, and spread out evenly on a tortilla. Then add Spanish rice, onion, and brisket. Add shredded cheese to top it off. 

9. Fold the sides of the tortilla, and roll together to hold all ingredients in. Place wrapped burrito into casserole dish. Repeat steps until casserole dish is full. 

10. Pour queso over all the burritos, and add red peppers on top. 

11. Cook for 30 minutes. After removed from oven let rest for 10 minutes before serving. 

 

This was a hit with everyone in my family! (Tip: Eat it with sour cream.)
